Friday feels = Taco feels. Smash your way into the weekend with these epic Bacon Chorizo Breakfast Tacos! Crafted on the HALO Elite Griddle, each bite delivers crispy chorizo, sizzling bacon, and creamy toppings for a brunch-time explosion of flavor.
Ingredients
4 corn or flour tortillas
4 oz premium ground chorizo
4 slices thick-cut bacon
4 eggs
¼ cup queso fresco, crumbled
¼ cup Mexican crema
¼ cup salsa (your choice of heat)
Handful of microgreens
Salt & pepper, to taste
Optional: hot sauce for extra kick

Preheat your HALO Elite Griddle to medium-high heat.

Smash & cook the chorizo: Form 4 equal portions of ground chorizo. Press each onto one side of a tortilla. Place chorizo-side down on the griddle and cook for 3–4 minutes until crispy. Flip and cook the tortilla side until warm and golden.

Crisp the bacon: While chorizo cooks, add bacon to a different zone of the griddle. Cook until crisp, about 5–6 minutes. Set aside on paper towels.

Fry the eggs: Crack eggs directly onto the griddle. Fry sunny-side up or to your preference. Season lightly with salt and pepper.

Assemble your tacos: Place a chorizo tortilla on a plate. Top with a strip of crispy bacon, a fried egg, a spoonful of salsa, crumbled queso fresco, a drizzle of crema, and a pinch of microgreens.
