Description
These buttery, citrusy, and slightly spicy Zesty Grilled Shrimp Rolls come together easily on the ELITE4B Griddle. Juicy, seasoned shrimp are grilled, tossed in a creamy, zesty herb sauce, and tucked into toasted brioche rolls for an easy yet impressive meal.
Ingredients
2 tbsp olive oil
2 lbs shrimp, peeled and deveined
SPG seasoning (salt, pepper, garlic)
Pinch of Goya Cilantro Achiote Sazón (optional)
¾ cup mayo
2 tbsp ground mustard
¾ cup chopped parsley
⅓ cup fresh dill
2 cloves garlic, minced
2 tbsp shallots, diced
Zest of 1 lemon
2 oz lemon juice
Pinch of cayenne pepper
6 brioche rolls
Butter for toasting
Red pepper flakes (for garnish)
Instructions
Preheat the ELITE Griddle to medium-high heat.
Cook the Shrimp:
Drizzle olive oil on the griddle.
Season the shrimp with SPG seasoning and a pinch of sazón (if using).
Cook on the griddle for about 2-3 minutes per side, until pink and slightly charred.
Make the Sauce:
In a bowl, mix mayo, mustard, parsley, dill, garlic, shallots, lemon zest, lemon juice, and cayenne pepper.
Assemble the Rolls:
Butter the brioche rolls and toast them on the griddle until golden brown.
Toss the cooked shrimp in the sauce and load them into the toasted rolls.
Sprinkle with red pepper flakes for extra heat.
