2 Kielbasa Sausages (or smoked beef sausage)

23lbs of Thick Cut Bacon

1 Pineapple

Chipotle Pecan Seasoning by Melissa Cookston

Stubb’s Original BBQ Sauce

Preheat pellet grill or smoker to 275°F and begin prepping your bites

Cut pineapple into 3/4in thick cuts in half-dollar diameter (as shown in video)

Cut kielbasa into similar fashion

Cut bacon perfectly in-half

Dress bites by stacking pineapple onto kielbasa, wrap around the half-cut bacon and overlap bacon onto itself to give enough room for the toothpick to stick in and hold it all together.

Place onto the warming rack, season with chipotle pecan, and onto the smoker for 1-1hr and 15 mins, or until bacon is finished cooking.

Allow to rest for 5 mins. Top with Stubb’s, finish with chives, and dig in!
