For Bacon Wrapped Cheerwine Pickle Bites:

1 bottle of Cheerwine

1 jar of pickle slices

Thick-cut bacon

BBQ Rub (Cherry Cola BBQ Rub recommended)

For Cheerwine Cherry Jalapeño Chutney Dipping Sauce:

2 cups of pitted and halved fresh or frozen cherries

1/2 cup of Cheerwine soda

1/4 cup of finely chopped red onion

1/4 cup of apple cider vinegar

1/4 cup of brown sugar

1 small jalapeño, finely chopped

1/2 teaspoon of ground ginger

1/2 teaspoon of ground cinnamon

A pinch of ground cloves

A pinch of salt

1 tablespoon of lemon juice


Instructions

For Bacon Wrapped Cheerwine Pickle Bites:

Replace the pickle juice in a jar of pickle slices with Cheerwine, and refrigerate overnight.

Cut thick-cut bacon slices in half.

Wrap each pickle slice with a half slice of bacon.

Sprinkle BBQ Rub (e.g., Cherry Cola BBQ Rub) over the wrapped pickle bites.

Preheat your Prime Pellet Grill to 350°F.

Place the bacon-wrapped pickle bites in the smoker and cook for about 45 minutes, or until the bacon is crispy.

For Cheerwine Cherry Jalapeño Chutney Dipping Sauce:

In a saucepan, combine 1/2 cup of Cheerwine soda, 1/4 cup of apple cider vinegar, and 1/4 cup of brown sugar. Heat over medium heat until the sugar has dissolved.

Add 2 cups of pitted cherries (fresh or frozen), 1/4 cup of finely chopped red onion, 1 small finely chopped jalapeño, 1/2 teaspoon of ground ginger, 1/2 teaspoon of ground cinnamon, a pinch of ground cloves, and a pinch of salt. Stir to combine.

Reduce the heat to low and simmer the mixture for about 20-25 minutes, allowing the cherries to break down slightly and the mixture to thicken.

Optionally, use an immersion blender to blend the chutney to your desired consistency.

Remove the chutney from heat and stir in 1 tablespoon of lemon juice.

Allow the chutney to cool and use it as a dipping sauce for your Bacon Wrapped Cheerwine Pickle Bites.
