Make your backyard get-together a gourmet experience with these delicious kebab bites! This easy kebab recipe gets you perfectly smoked, tender cuts of medium-rare steak off your Prime1100 and beautifully crusted potato slices, mushrooms, and onions off your ELITE3B. Nail the perfect pellet grill/griddle combination with these mini kebabs!
Ingredients
3 NY Strip steaks
8oz Mushrooms
1 Large Onion
4–6 Medium-Sized Potatoes
Butter
Olive oil
SPG (salt, pepper, garlic powder)
Oregano
Parsley and parmesan for garnish
Toothpicks
Instructions
Preheat your Prime1100 pellet grill to 225F and begin seasoning your steak with salt, pepper, and garlic. Place in the grill and stick a temperature probe in one of them
While that smokes, rinse and slice up potatoes into 1/4-1/2″ slices (circles) and cut those in half-moon slices. Season with salt, pepper, garlic, and oregano. Cut onion into quarters from top to bottom, then in half side to side on each quarter (kebab style)
Preheat the first dial on your ELITE3B griddle on “low” and the next two dials on “high” for 12 minutes. Place some butter and olive oil on the “low” temp area and use tongs to place the potatoes on the griddle to avoid getting your hand grease-splashed
While the potatoes cook, remove steak when it reaches 125F internal and place on the “high” portion of the griddle for 2-3 minutes on each side to get a nice sear. Remove and set to the side and allow to rest for 10 minutes. Turn OFF the two “high” dials
While steak is resting, flip over potatoes and put down 3 Tbsp of butter on the right two dials portion (remaining off) and the mushrooms and onions (keeping them separate). Cook until mushrooms are colored and onions are translucent
Once everything on the griddle is finished, place into separate bowls and return to resting steak. Cut steaks into bite-sized cubes and begin building your kebites. Start with steak, onion, mushroom, and top with fried potato.
If the steak is cold at this point, place kebites in the pellet grill at 225F for about 10 minutes and they will be perfectly hot. Garnish with parsley and grated parmesan. Enjoy!
Notes
To ensure that you avoid getting food too cold while resting or burnt on the griddle, have all your ingredients prepped and seasoned beforehand in bowls, and a cutting board readily available. This will prevent you from going in and out of the house unnecessarily. Proper prep is essential to nailing this recipe!
